To make this dish dairy free, omit the cheese and use a different dressing.
Ingredients:
Lamb Meatballs:
- 1 lb ground lamb
- 1 tbsp cilantro
- 1 egg
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp salt
Gyro Bowl:
- 5 oz. arugula
- 1 c. grape tomatoes, halved
- 4 oz. feta or goat cheese, crumbled
- 1/2 cucumber, sliced
- 1 c. kalamata olives
Lemon Cumin Yogurt Dressing:
- 1/2 c. full fat Greek yogurt
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1 tbsp cumin
Instructions:
- Preheat oven to 400’.
- In a large bowl, combine the 1 lb ground lamb with 1 tbsp cilantro, 1 egg, 1/2 tsp cumin, 1/2 tsp coriander, and 1/2 tsp salt until well blended.
- Roll into golf ball sized meatballs and place on a baking sheet.
- Cook for about 20 minutes, or until cooked through.
- Prepare the dressing by combining the 1/2 c. yogurt, 2 tbsp lemon juice, 1/2 tsp salt, and 1 tbsp cumin.
- Prepare the gyro bowls: Divide the arugula, tomatoes, cheese, cucumber, and olives between four bowls.
- Top with meatballs and serve with the yogurt dressing.
